I am currently looking into the components for a new pc. I have narrowed it down to an i7 920 or i7 860 for the cpu.

The main uses for the pc will be Gaming, using Virtual Machines, web browsing and the ususal.

I was thinking of the 860 being a good route as it has a higher standard clock speed, a higher turbo mode and also should run cooler as it has a lower TDP.

Whichever one I pick I am going to use a Corsair H50.

If your not doing anything like intensive professional video-editing / photoshop then the i5 750 would be fine...but on the other hand if you can stretch a 100 quid just go for an i7 920 and overclock it to 4ghz.

Sounds as if Intel are focusing more on LGA socket 1366 rather than socket 1156 so you'll be "future-proofing" yourself a little too.
