I'll say this now, Haswell is due soon around the 4th of June. Having said that the builds look ok but I have no prices or budget to work to.

I would probably now lean more to 2011 as it still has CPUs to be seen for it (Ivy-E) and does offer Hexcore support. Nothing wrong with Ivybridge but I'd rather wait and see what Haswell brings and what the pricing becomes. In truth even the sandybridge i7 2600K can't be sniffed at still.

I look forward to seeing what you settle on :)

Thanks guys, I'm aware of Haswell but I'm really eager to get a machine now so I can start saving money sooner for a move. I've gravitated towards the top build but someone else told me that the bottom build was better. I just want a future proof build that'll last! honosuseri, there is no budget ;). So recommend away!

You do need a GPU on socket 2011 as there is no IGP. Did you already have one?

YOUR BASKET
1 x Intel Core i7-3930K 3.20GHz (Sandybridge-E) Socket LGA2011 Processor - Retail £479.99
1 x HIS HD 7950 IceQ BOOST 3072MB GDDR5 PCI-Express Graphics Card (H795QC3G2M) £239.99
1 x Gigabyte X79-UP4 Intel X79 (Socket 2011) DDR3 Motherboard £209.99
1 x Samsung 256GB SSD 840 PRO SATA 6Gb/s Basic - (MZ-7PD256BW) ** Cash Back Promo ** £194.99
1 x Samsung Green 16GB (4x4GB) DDR3 PC3-12800C11 1600MHz 30nm Dual/Quad Channel Kit (MV-3V4G3D/US) £123.98
1 x Silverstone Strider Plus 850W Modular '80 Plus Silver' Power Supply (SST-ST85F-P) £119.99
1 x Antec P280 Super Midi Tower Case - Gun Metal Black £99.95
1 x Seagate Barracuda 2TB 7200RPM SATA 6Gb/s 64MB Cache - OEM (ST2000DM001) HDD £79.99
1 x Alpenföhn K2 Mount Doom CPU Cooler (Socket 775 / 1155 / 1156 / 1366 / 2011 / AM2 / AM2+ / AM3 / FM1 / FM2) £56.39
Total : £1,626.67 (includes shipping : £17.85).

* No messing around gone for a Hexcore i7 CPU paired to 16GB of decent OC'ing RAM in quad channel
* GPU is external exhaust, ideal if you want to add a second GPU eventually. Also overclocks well and you should be copping some free games too :)
* Better SSD still with cashback

All in all a beast of a rig for any job but I've hardly gone stupid with the "unlimited budget" :) It does help to know the intended use of the machine to help balance things out.

I already have a GTX 670, forgot to mention. It'll mainly be a gaming machine (ARMA 2 & 3! BF3 & 4) although I'll be doing some video encoding, 3D modeling and image/video rendering too. Thanks honosuseri! :)
