Does everything here look ok please. Correct ram. PSU watts ect.
I've got a wraith prism to use so hopefully that will be good enough. Or I might get the Corsair air cooler.
Also a 3060ti when available. Still torn between the 5600x and the 3700x. Gaming / light streaming.

The Wriath Prism should be fine paired with a 5600X. I would stick with the 5600X over the 3700X as it should be better for gaming. You can use the gpu for encoding anyway with nvenc.

I would go with the 3200MHz kit as it is cheaper, and you won't notice any real world performance difference.

A 550W psu is enough for a 5600X and 3060 ti but maybe consider a 750W if you intend to upgrade the cpu/gpu etc in the future. The SuperFlower Leadex III/ARGB 750W or Corsair RM 750W are both good. The TXM is also fine but ocuk don't seem to stock the 750W version.

Thank you for the advise. There will be no upgrading , hopefully this should be ok for the next 5 years or so then it will be a new build.
