Advice Sought - Estimating Performance

In some of the newer AAA games - Rise of the Tomb Raider / Shadow of the Tomb Raider, etc - and even some of the older ones (I'm a bit of a fan of Egosoft's X Series of 3D Space Adventure/Sim games) there are built-in frame-rate performance monitors... I'm not entirely sure how to measure performance of games that don't provide that, but as/when I get this monster finished, I'll be able to report back on performance results...

Do people play those types of games on triple monitors? I can understand it for sims sure, where you need to create the wider FOV.

Have you seen any of the videos about the new Reverb G2 VR headset? I know some hardcore simmers prefer triples over VR but perhaps this will start to change once resolutions improve. VR is incredibly immersive.
 
I'd go for an ultrawide high refresh monitor to not deal with borders and enjoy high refresh rate gaming. You can always use an additional screen for work and youtube while gaming.
