I have an SSD and Windows 7 so I run my SATA using AHCI.

Would there be any issues if I swapped it back to IDE mode for something, then changed it back to AHCI again?

really? i installed ide mode and then had to do a windows hack as was getting BSOD when i wanted to change back

That's a different issue, if you install in AHCI mode you can switch freely back to IDE and forward to AHCI since the AHCI driver is already enabled, but if you install in IDE mode the AHCI driver doesn't get enabled on install hence you having issues.

well maybe, but but as the guy above me stated he had issues, and i think there can be, just good to advise that issues *could* arise

You never need to reformat if you switch and it won't boot. Just insert the W7 disc and do a repair. It will detect the install and reconfig the MBR again.
