AIO Question

Hey all. New to AIO cooling and just have a quick question.

Possibly a stupid question but Do i need to be mindful of the water temp rather than the CPU temp?

Im using an X62 on an i7 7700k and have set a custom fan curve to the CPU temp, but it has dawned on me that as long as the liquid if fairly cool id be better off setting the curve to the liquid???

Any input would be gratefully received.

Thanks VKleita, that was my thought process as the fan is not directly cooling the CPU.
