Air or Water?

What is the difference performance wise between air and water cooling. I have a reserator 1 on an Athlon XP 2400+ and it keeps it between 43 and 50 which to me seems to be similar as you could get on air. When I got it it was because I wanted a silent case but since then Ive added more in there and had to get case fans and stuff so noise isnt quite an issue.

I guess my questions are these:
1. Which are better water cooling systems then the reserator and how do they compare noise wise?
2. Why choose water over air when you can get the same temps on air which is a lot simpler.
 
Normally temps on water are much lower than air. Which suggests to me either your watercooling is rubbish, not set up properly or isn't sufficient to cool your computer.

you're using a reserator 1. the point to those is not really to give you extreme cooling, but to give you similar cooling to air, in complete silence.
