Airport and Time Capsule question.

Evening all.

I currently have an Airport express connected to a DAC, which is connected to my amp.

Would it be possible, to rip all my CDs losslessly to a Apple Timecapsule, and stream the music from the capsule to the airport express, giving me a wireless hifi set up?

Would it possible to use my ipad 2 s the 'menu' from which the songs are selected?

Not using the built-in music player, that can only play from iTunes Match or your device itself. If you can find a music player that can connect to a network share then you will be able to AirPlay it back to your Airport Express without any issues at all. This will involve the device doing the playback though, rather than being just a remote.

The other option is to leave a PC/Mac on and point iTunes at the library on your Time Capsule and use the Remote app on your iPhone/iPad.
