Am I being stupid here?

1066MHz RAM can run off a 533MHz FSB (2132MHz quad pumped for the CPU) when the divider is 1:1 so yeah, plenty of headroom.
 
yes, it wont be 1:1 with the Q9xxx but it will be ok. You can just ajust your FSB to match... in case you want your PC 1:1 (I do, always)

This is just for a living room PC that'll be a general media centre and play the odd low-fi game so I won't be going mad with the CPU. Its just a good deal cheaper for a 2.66Ghz 1333FSB Conroe than it is for a 1066MHz 2.4GHz one, for some reason (I'm guessing its made with a smaller process, so you can fit more on a given sheet of silicon?)

if i buy a 'Wolfdale' 3.00GHz (1333FSB) what is the best mem spec to buy for a 1:1 ratio
 
Depends on if you will be overclocking or not.

If not then DDR2-667 will match the fsb.

If looking for around 400fsb (3.6GHz) then you will need DDR2-800

If you are looking to overclock to the max possible then you will need DDR2-1066

Slower ram can be overclocked too but there are no guarantees with that, but take a look around for good overclocking kits and you can save some money.
