Friend of mine used to drive the 'prop cars' around for casualty and the bill, and there was no limitation regarding looking like an emergency vehicle, apart from turn the blue lights on, then you will instantly get into trouble.

As above, no problem with driving around in an ambulance - there are plenty of privately run ambulance services.

I read previously the same applies to police vehicles too but any police lettering or locations i.e. West Mercia need to be covered up.

Correct, and retro-reflective markings in the colours used by emergency services are protected by law. A lot of security companies skirt the issue by making them non-reflective.
