Is there a big performance increase between the 570 and 580 which is worth the £25 extra? I take it they both only need 1x 6 or 8 pin power connector?

This is going in an itx pc in the lounge and the most demanding game will be Witcher 3. I'd like to play at high settings 30fps 1080p.

Ok you can get a 590 for the same price as a 580?! With the game bundle too...
 
From memory the rx580 is about 15% faster and needs 8 pin connector. I would recommend getting a power colour or a sapphire model. The 590 is about 10% faster than a 580 but does pump out more heat.
 
A 580 will do 60fps in The Witcher 3 at high settings and 1080p, so either should serve you fine if you're only looking for half that. Don't buy one of the very cheapest models like the PowerColor Red Dragon though, especially not for a HTPC. They get extremely loud without some serious undervolting.
 
Grab the 580 for 1080/60 with a mix of ultra and high, or just max it if you don't mind a few drops to 50ish.

590 would be too loud for a lounge pc imo, it consumes way too much power for its performance too
 
Rx is not ideal for itx build only Rx 580 nitro+ is quiet comapring to other 580. I have red dragon and its noticable louder plus backplate gets very hot increasing case temps for Itx lounge build have a look at gtx 1650 super. Less power hungry, smaller, less heat and noise more fps on witcher than RX590
