AMD AM3 motherboards

CrossHairIII is NOT SLI ready my friend. It does CrossFire. If you are looking for an AMD board that supports SLI and AM3 then try looking at the CrossHairII. I have this board and its great.

It Will support all AM2/AM2+/AM3 CPUS and it uses DDR2 and NOT DDR3. This is a Positive or Negative, depending on how you look at it.

The Crossfire II and III are two totally different chipsets. The Crosshair II is 780a Nvidia (SLI capable + DDR2) and Crosshair III is 790FX (ATI Crossfire + DDR3).
 
Upgrading my system to the following:

1 X AMD Phenom II X4 Quad Core 955 Black Edition 3.20GHz Overclocked to 3.80GHz!
1 X Asus Crosshair III Formula AMD 790FX (Socket AM3) PCI-Express DDR3 Motherboard
1 X Corsair XMS3 8GB (4x2GB) DDR3 PC3-12800C9 1600MHz Dual Channel Kit
1 X Titan Fenrir CPU Cooler CPU Cooler
1 X Arctic Silver 5 Thermal Compound (3.5g)

Can I use a single BFG 8800 GTS OC 640mb or should I also get an AMD/ATI 5850-5870 ?

You can use the 8800 by itself just fine on the 790FX chipset, just not SLI. SLi 8800 is kinda weak compared to recent cards, so maybe upgrade to a 5850/5870 in the future and then go crossfire? But it depends on your power supply as well which you haven't stated.
