Android Custom ROMs tweaking?

Is there a way for instance that I can remove the ADW Launcher from the CM7 ROM and put the LauncherPro.apk in its place?

Also, is there a way / list of things that can be removed safely (so I can choose which ones I want, etc).

yes, i do something similar with my fresh install update --> http://forum.xda-developers.com/showthread.php?t=878646

i remove ADW and replace it with the stock launcher + remove a load of junk apps.

there is a list of apps you can remove on the cyanogenmod wiki iirc
