Any suggestions for impressive vegetarian meals for hosting?

Preferably a bake of some sort like a lasagne, gnocchi bake, moussaka etc.? I'm hosting my Dad and his wife (who's vegetarian) and he's always joking about my good cooking. I am a decent cook and enjoy it, just all of my more impressive meals are meat based (curries, stews, roasted meats etc.).

We do eat vegetarian food during the week, but they're all quick pasta, risotto or tofu stir fries etc so I'm a bit stuck for ideas. We've done this one for them before which went down well; https://thequirkandthecool.com/2016/05/08/jamie-olivers-super-squash-lasagne/

Ah thanks @ttaskmaster but I forgot to say she's not keen on risottos. Shame, I cook them all the time. Never heard of a Bobotie, sounds intriguing! Wonder if there's any sort of veggie pilaf/biryani worth a go...
 
I find I react to chickpeas quite badly :p, and alas I forgot to mention that my Dad isn't keen on very spicy food. Hence looking at bakes of some sort! I do make a decent tadka dhal, and separately a paneer and cauliflower and pea coconut curry. Hmn.
