Been trying to find a RTX 3070 since last December? Is there any way to know when more are coming into stock on Overclockers?

I enquired about a different model and the employee at OC just said keep an eye on the website for the stock updating but models are bought up very fast. I think without some kind of bot automatic purchase software you're unlikely to get one.
I'm in the same situation... I've seen them a few times in other retailers, altough they were being sold at 750£... I managed to add one to my cart once at 550-570£, but I couldn't complete the order. Seems people is buying them using bots, so there is no point in trying anyway, unless you are willing to pay +200£ over recomended price... and even like that, it is no easy task...
