Any way to upgrade my system?

Or is a complete new build needed? I built this in 2013 and TBH it runs everything I play apart from hogwarts legacy. It's not too bad with everything on low but it's a little glitchy at times.
My system
Case- Corsair Obsidian 650D Mobo- Asus P8Z77-V Premium CPU- i5 3570K (Noctua NH-D14) GPU- MSI Lightning 290X PSU- XFX Pro 750w Memory- 8GB Corsair 1600Mhz Storage- 840 EVO 250gb - 2TB WD...

Could I just chuck a new GPU in or would that be pointless?

Hogwarts Legacy System Requirements (Minimum)
CPU: Intel Core i5-6600 (3.3Ghz) or AMD Ryzen 5 1400 (3.2Ghz)
RAM: 16 GB
VIDEO CARD: NVIDIA GeForce GTX 960 4GB or AMD Radeon RX 470 4GB
DEDICATED VIDEO RAM: 4096 MB

Recommended Requirements
CPU: Intel Core i7-8700 (3.2Ghz) or AMD Ryzen 5 3600 (3.6 Ghz)
RAM: 16 GB
VIDEO CARD: NVIDIA GeForce 1080 Ti or AMD Radeon RX 5700 XT or INTEL Arc A770
DEDICATED VIDEO RAM: 8192 MB

Looking at this video, and the memory use which exceeds 8gb, you might get away with upgrading to 16gb ram to make the game "playable". the glitching and stuttering could easily be caused by running out of Ram.

Also make sure its installed on an SSD not an HDD, which is also a cheap upgrade which you can re-use on a new PC. (your current SSD might not have enough room and i wouldnt leave windows without some decent swap/temp space)

Personally, I'd run with what you got until it breaks and start saving.

If you're not already. You could take up old games like winspww2 and Master of Magic ( both of which are still well worth playing imo ) and forget hogwarts.
At 10 years old, I would think you must be nearing end of life on some of your parts there. Maybe most.

It's had very light use in its life and nothing has been OC. PC runs fine and like I say every game I play is fine, it's only hogwarts that has had me messing with settings. Even then the game is playable it's just the odd stutter now and then.
I don't mind trying upgrading the ram and moving it onto SSD.

What do I need to do to upgrade ram? Is it a case of just putting new in? Is it worth upgrading all the ram or just try find what I already have? Sure I have 4 slots.

Ram can be tricky. I got 2 more sticks for my (old) pc, stuck em in the two spare slots and nothing worked. Had to take out the old 2 sticks and put the new ones in those slots.

Look up youtube videos on how to install new ram. You can look at the 2nd hand high street chain website for ram, 2x8GB is £20 (£10 each).

One reason that can happen is due to density changes and unfortunately these aren't well publicised, a lot of the DDR4 on sale right now is not officially compatible with 7th gen and earlier CPUs, for example. The same thing happened with DDR3 around P55/H55.
