Anyone do Low GI?

I am about to start the low glycemic index lifestyle as recommended by therapists. Only I am having issue finding easy-to-make foods that you can eat especially snacks. Everything seems to require baking - is there not anything I can just go and buy?

It is so easy to go and buy a snickers bar but not so easy to go and buy the healthy equivalent!!
 
Other half did it for a bit when she had to change her diet. What's the problem with baking, you got no oven?
 
Why do you need to bake? If you are looking at and wanting all the normal foods, with alternatives, then you are doing it wrong imo. Fine as treats or odd meal, but not as a daily thing.

At it's core it's similar to many other "diets" basically avoiding processed carbs, and eating unrefined fresh food. But unlike paleo, you have access to far more grains.
