As I'm doing it in January next year, I'm wondering what the road conditions are like.

I've been through France, Grenoble area before at that time of year and the conditions were ok.

What should I expect, would I need winter tyres and chains? As one of the options I'm looking into is hiring a car from the UK to travel there.

Edit: Should have mentioned, we'll be south/west of Salzburg heading into the mountains for Skiing.

Depends entirely on the weather and where you're going. I've driven in the French and Italian Alps in the winter. One moment you can be fine, the next it can be snowing real hard and you're wishing you had chains, which can be a requirement to drive above certain altitudes. The Police will stop you if you don't have them and the weather is bad.
