you dont always get perfect resuts, but it is possible to remove only the acapella.. its something to do with how the recording was made, and if its in true balanced stereo, plus about 500 other things.
hardware units such as this do it, but im not sure how well because its only £50
or an old sonic foundary app called 'soundforge' has some tools as part of it that are do the same thing.
another sony program called Acid pro, from pro 3 to 6, i think, all have the ability to remove acapella's and some other sounds (guitar riffs, leads etc)
or i guess any music production style program or sequencer that supports VST's/VSTi's could be made to do what you want if you find the right plugin
