Anyone made cheesecake before?

I'm having my first stab at making a cheesecake tomorrow which I plan to share with my Uni flatmates.

Does anyone have any tips or experience of making cheesecake that would be a benefit to me?
Any good recipes would be nice too, they seem to vary so much from person to person, book to book.

I want to make it totally from scratch, as it were, not from a box

I've developed an interest in baking while being at Uni
 
I have a recipe that I plan to use, but every recipe I see is different.

I was just wondering if anyone had any experience of making cheesecake that I could possibly learn from, so that mine turns out tasty :D
 
There are loads of different types of cheesecake - depends what type you like.

But if your doing it yourself you could try a new york style recipe - as its quite different to most commercial cheesecakes over here.
 
You definately need to start with a good base of digestive biscuits mashed up into crumbs then mixed with melted butter, digestives are best for flavour, with mascerponi cheese mixed with icing sugar to make the sweet cheese base, and whatever topping you want on top of that, but remember to wait for the base to cool down first, pop it in the fridge whilst you make the cheese :)

ive made a few , best advice i can give is to measure everything exact to the recipe ,follow the instructions to a T and allow plenty of time for it to set or chill, eg 12hrs minimum

for ingredients philladelphia is a good cream cheese to use, dont use the light version though ,or if you want to save some money then tescos or morrisons own brand will do

of course it all depends on the cheesecake your making, personally i prefer a new york or london baked cheesecake
 
What's different about these other cheesecakes, to the 'traditional'?

there are so many varieties and methods of making a cheesecake

some you bake, some you mix and set and some can be mixed and used right away

a traditional is a baked cheesecake i think, i could be wrong though
 
I made baked cheesecake tonight :D

Unfortunately it seems making it from scratch is actually more expensive than buying one ready made when all the ingredients are added up :(
