AnySharp Knife Sharpener

I used to have an anysharp and whilst it does give a pretty decent sharp edge, it strips away quite a large amount of metal every time you use it, it doesn't take long for the knife to start loosing its shape.
In the end I bought a knife wizard ke198 from ebay for about £20 which does a much better job at sharpening with minimal metal loss.

After being a bit disappointed with the results on a minosharp I bought a whet stone 3000/8000 grit. Also an angle guide to keep the blade at the correct angle. The results are incredible, my knives are really sharp. On first use it took quite a while to get a good edge on them but now just give them a quick pass a few times on each side and they are razor sharp again.

IMO any other method is a compromise.
 
I used an Anysharp at the weekend. Funny this thread should pop back up :D

I used it on some particularly blunt knives that had taken a lot of abuse from long term use of a steel and then incorrect use of a whetstone. The Anysharp cut a new edge after just a few strikes and the knife was ready to use again. It removed quite a lot of material, but re-set the angle of the edge correct again. I was quite impressed with this.

I wouldn't use it every time because it removes too much material. But what I would say, is that you can't use just a steel forever - even if you have a good technique. The knife does go dull from long-term steel use and, without re-grinding the edge to the correct angle, after a while you won't be able to keep it sharp. I've never mastered the use of a whetstone and the Anysharp made a pretty damn good job of cutting a new edge. I would use it just to do that, use a steel day-to-day, then use the Anysharp again when it is needed.
 
Wouldn't use an AnySharp on any quality/decent knives you might have as Jonny69 mentions it removes too much steel. It would be ok for cheaper knives you dont really care about. I' hardly ever use mine now It's just too crude and can possibly cause more harm than good. Stay away and find something better.
 
So the general consensus is that for the majority of people (ie. those with normal, cheap knives), it is a great piece of kit.
