Apple Brandy recipe

We have had loads of apples this year and thought as a way to try and use them up to make our own "apple brandy."

Anybody have a tried and tested recipe for stilling apples in brandy? Loads of variants out there on Google.
 
Distilling might be wrong term.
Cutting up apples and letting them soak/ferment in some alcohol.

I've seen some recipes use 100% brandy and other a mixture of brand and other an alcohol.
 
Ahh maceration!

Never tried it, but would probably be worthwhile drying them out in a low oven first. Added bonus of caramelising some sugars as well. Might be worthwhile macerating in 90% spirit first, then you can dilute later, and even add a proportion of brandy if you feel it needs a more 'cultured' flavour.
