APU and GPU for Multi Screen system

I'm being asked to price up a system for flight simulator that will be used for training pilots, the program itself isn't exactly heavy duty, but there is a desire to use the system with up to 8 monitors. I wondered if I paired an AMD APU (which I understand can handle dual monitors) with a half decent AMD GPU (which I believe can handle 6 monitors) if that would possibly do the trick?

Although there may be a lot of monitors being used, they shouldn't be run at a high resolution so I'm hoping it wouldn't tax the system too much. For what its worth, here are the system reqs on the software -

System Requirements:
+ Java version 1.6, or 1.7, or a higher compatible version. If Java is not already
installed on your computer, it can be downloaded free of charge from java.com.
+ Apple OS X, or Microsoft Windows, or Linux or any other operating system
that supports one of the above Java versions, and that includes a PDF reader for
viewing this book. (PDF readers are also available in the Internet.)
+ A monitor with at least 800 x 800 pixels. Undersized monitors can be used
as*well—for example, to display certain small flight deck sections on networked
monitors—, but the instructor screen will then be cropped, and should then be
displayed on a second, suitable monitor. Do not use Retina resolutions.
+ Dual-core or multi-core microprocessor, running at 2.5 GHz or higher.
+ 4 GB RAM or more.
+ 3 GB free hard disk space.
+ A keyboard, ideally one that includes a numeric keypad.
+ A mouse, or any similar pointing device.
+ Access to a DVD drive is required for the initial installation

I'm planning on putting together 3 different specs for them as they have asked how much something that will be totally overkill would cost them, but I wondered if going down the APU/GPU route would give them a budget alternative. If this isn't viable I'll just go down a single GPU route for the budget system and tell them to cut back on the monitors.
