Are different gpus with the same chipset basically the same?

RX 6800 and RX 6800 XT are different. Anything else is probably just the card manufacturer adding on their superduper gamingpower marketing blurb.

You can tell by watching review roundups, e.g. this review includes thermals, noise and power for:

6800 XT Speedster (XFX)
6800 XT Strix (Asus)
6800 XT Red Devil (PowerColor)
6800 XT Nitro (Sapphire)


Each brand also has a hierarchy within that range, e.g.

Pulse, Nitro (low to high, Sapphire)
Dual, TUF, Strix (low to high, Asus)

Higher end cards are usually: quieter, cooler and heavier.

In terms of performance: the difference is usually very small (1 or 2 fps), but some cards have a slight factory overclock that puts them ahead in the benchmarks.

Now I'm suddenly interested in every company's naming schemes and talking who has the best
 
Does it matter that much

Not really, other than what @montymint and @Tetras commented on.

I personally go for the cheapest model with the longest warranty, although doing a little research prior to ensure there aren't any underlying problems with the particular version of card is worthwhile.

I generally end up with Zotac when going Nvidia as an example, 5 year UK based warranty.
