Assassins Creed

Depends on what setting you prefer really. Of the 'new style' AC Origins is ancient Egypt and Odyssey is Greece. Latest one is Valhalla (Vikings). New style refers to it being a bit more rpg like with weapon drops that have stats and damage numbers etc.

Black Flag (IV) was pirates and I think the first to introduce ship combat. Was the first one that got me into the series, I found the others all lacking.

I know nothing about the others outside of settings.

Origins, Odyssey or Valhalla are the three best in the series, by some way imo.

If I had to pick one I’d have to say Odyssey. Pick whichever you prefer the setting as the three are very similar in gameplay mechanics.
