Assitance/Spec for a 'work' PC's

Hi guys, I would really appreciate some assistance with picking the right components for a few cheap as possible identically spec'd work machines used primarily for running MS office and Intuit Quickbooks (accounts software) (no gaming or media use), which are often (but not always) accessed remotely and therefore I want something small and extremely fast - bottle-necked only by internet speed.

I've already bought Samsung 840 Pro 256GB SSD's as my starting point and WD Green HDD's for backups. They will be running either Win 7/8 pro.

I've been looking at the Shuttle SZ77R5 http://www.overclockers.co.uk/showproduct.php?prodid=FS-148-SH&tool=3, but cant seem to see the value in it (please correct me if i'm wrong)

I'd like something around the same sort of size as the Shuttle.

What should i look for, CPU, MoBo, Memory PSU, Case, GPU (mobo-integrated?) wise, bearing in mind that *NO* media/HTPC/gaming will be done on this machine.

I also require USB 3.0 for further external HDD backups.

PS - I should state that I have built a couple of gaming rigs in the past and vaguely know to look for components wise if it were that situation again, but I've not build a 'work' machine before.

What would be the better option - the AMD build or the Intel one?

Am I right in saying that none of the ITX boards have Sata III? Is it necessary to get the most out of the SSD?

The sole Ethernet port is all i can foresee being used in the immediate and near future
