Asus P8P67 Evo made for overclocking.. but where to start

So I just treated myself with a new DIY HTPC / Gaming machine. This is my first time. Its all assemled and works beautifully.

The highlights

Asus P8P67 Evo mobo
Core i7 3.4 Ghz Sandy Bridge unlocked
16 GB Corsair Vengeance
120GB OCZ Vertex 3 SSD (550mb read 500mb write)
Noctua CPU Cooler / heatsink
600w Cooler master hard disk
1GB Radeon 5750 Sapphire

I would like to learn everything. I can see that the mobo has its own auto tuning / overclocking feature that came with mobo software suite, skeptical about using it. I also wanted to know if this or any other motherboards are overclocking on demand?

Any help is much appreciated
 
On another note, since I have set this all up and installed windows ultimate editions with all the latest drivers etc, it is shutting down randomly on its own. It doesnt happen when I am around though. I turn it back on and it says windows was not shut down properluy and if i wanted to go into safe mode. This is all new hardware that I have put in place myself. Any pointers at what might be causing this?

I usually leave the computer on 24/7
