In exactly the same boat here.

Like has been said above, I will wait for the beta and see what settings my XFX 5870 can handle. If I am not happy I will probably get another as it will be the cheapest option, though I would prefer a single card.

The fact is that is should be able to handle it as it is a very good card. The new frostbite engine is more optimised so even though the graphics look much more amazing than BC2, I do not think it will need much more GPU power to run. :)

A 5870 is up there in the top 2% of users. No need to worry too much. The card that most people have is a NVIDIA GeForce 9800!
 
Only thing that has really been on my mind about going xfire is this micro stutter a lot of people say they get.

But i did buy a MB for xfire so i think i should use it at some point lol.

I now wish i got a bigger psu at the time of building my pc but now thats going to be another +£100 i guess :(
