when i go download 8.11, i remove 8.10, restart and install. But when I go into CCC, and go to software information, it still says my version is 8.10. Any ideas?

Did you do a full un-install of the drivers, and then a driver sweep/clean in safe-mode before installing the .11's.

driver sweeper is a "hell no"- http://forums.overclockers.co.uk/showthread.php?t=17946834

i used the control panel to remove them, restarted, then installed 8.11 driver (it said the installtion was complete, but errors appeared, and if i go to view the log, it says it can't find it, so i wouldn't be able to see what the errors were)

Never had a problem using Driver Sweeper here, always do that when changing drivers, but im on XP though, what Driver Packaging Version does it show, as that will be the most important, 8.11's should be 8.552-, so if you have that, then you are running the 8.11 drivers.
