Is there many cases out there without a glass side panel? The Fractal North is an obvious choice but I've heard it can be quite loud.

I'm getting a little bored of the RGB in my H9 so I was looking to swap to something a bit more "tasteful".

Fractal North is very quiet, but in a pc the only thing that makes noise is fans, so it depends on how they are set up

Using the Fractal North XL Mesh, very quiet, but as with any case with good airflow, using the correct fans is what can make or break for you.
Using Silent Wings 4 140mm HS all around, and the Silent Loop 3 360. Adjusted so I can barely hear the fans, is more than enough cooling for me.
Arctic may show some humming at certain rpm ranges. I like the Thermalright fans better. TL-B12 or 14, or TL-K12 if you need very little RGB. Found them to perform quite well but none of the humming that you are likely to find on the Arctic ones. But if you want to splash and are picky for noise, T30 (only 120mm), Silent Wings 4 or Noctua are safe bets. Noise level is just a part of the history. Sound profile is not something reviews talk about often. EKWB AIOs, for example, dead quiet superb pump, but fans sound a bit rough even at low rpm.

The 601 is nice!

I don't see the point in having a glass side panel if I'm not going to have the RGB on. I'd rather it be a mesh or solid panel at that point.

I think I've decided I'm not going to find something that ticks all my boxes without it having a side window.

Does anyone have any idea if I'd see an airflow improvement going from an NZXT H9 to a Lancool 207 or a Sky Two GX?

I feel the intake fans on my H9 are a bit starved for air given their placement in the bottom and side.
