Aubergines!

Moussaka, fried aubergine lasagna, aubergine, fritters, grilled with olive oil, or simply mixed in with other vegetables to make a pasta bake.
 
Yeah sliced and grilled on the BBQ with a brushing of olive oil is pretty awesome :cool:

Or cube and use as part of a kebab!
 
I used to hate them, until 4/5 years ago when I accidentally took the wrong lunch, which was a pasta thing with fried aubergines that my sister made, and I forced myself to eat it. Made me gag a bit while I was eating it but after that I got used to them. Thinking about it now, I don't know why I forced myself to eat all of it when I didn't like it haha.

Slices, seasoned and brushed with olive oil, griddled, and then stacked with mozzarella, basil and sliced tomato.

Also +1 for Moussaka (Although I like courgette as well in mine).

I layer slices of aubergine, tomato and mozzarella in an oven proof dish and bake.
Sometimes I'll add some oregano and/or basil and/or garlic depending on how I feel.

I quite like it gridled too, but I prefer it baked.

Aubergine dip and chutney is also great.

Other than curried for look at Italian and Moroccan dishes. They know what to do with it
