So is the DSG gearbox worth looking at on a 1.4 Ibiza? Or better to go with a manual? Do you get little paddles to change gears rather than a normal stick?

I like dsg too but I would never, ever own one outside of its warranty period - that and it still has the issue of lag when pulling off that good slushboxes (merc, most bmws) don't suffer with. You can get round it by holding the brake but who really wants to do this everytime they're waiting at a roundabout, can't be particularly safe either.
Odd- Every dsg i've driven from the first car with the box (passat I think, at least that's the first car I drove it in) has a delay between pushing the loud pedal and actually moving when pulling off.
It was terrible when the box was first released, much better in the fabia but still definately there I found, maybe I've just been unlucky with the cars I've tried!
Seen a few reports and have experienced that if you try and give a good amount of throttle from a standstill you get a second or two of standing stationary and filling your pants, then you're off. Putting it in manual mode stops it.
^ This is why you don't want a dsg box outside of warranty, there are many many stories like this that the reviews wont tell you about as the journos are kicking about in brand new cars
I've seen very few reports off the older wet clutch DSG boxes dying (touch wood). They certainly survive eemapping much better than the manuls which quickly eat their clutch. Not sure what the dry clutch boxes are like.
