So my TV unit houses my rpi along with a HT amp and soon my nas. It has solid front doors but vents in rear so will be putting some large slow fans in the rear to draw heat out.

My question is how can I control these fans so then spin up and slow down when needed?

my 2 cents..

The ear is very sensitive to any changes in pitch of background noise so changing fan speed can draw your attention to the fact that the fans are running. It may be better to just have 1 or 2 good quality fans running at low speed and your brain will filter the noise out (as long as it is low and constant level).

You also need some vents in the front through which the fans can draw air else they won't work properly.

honestly, don't bother trying to control them. I have very slow / silent scythe 120mm fans in mine and they are powered from the TV's USB socket - so when the TV is on, the fans are on. The TV is always on if any of my equipment is on - amps, players, consoles etc so it's a pretty good sourse for a switch.

there's no need at all to have them responsive to temperature - they will only annoy you!

also if you're front doors are solid, consider adding vents at the front/bottom of the cab'. I suspect there will be enough air-gap for the fans to be able to pull air from but consider that point please!
