Back Up process for Mac Mini

My Mac mini has arrived and I would appreciate some advice on back up and efficient workflow please - it's my first experience with Apple

The machine will mainly be used for photography and I've got 2 x 5TB external hard drives for back up storage. It's been suggested to me to use them as RAID by mirroring as each drive can easily be separated to be removed to a different location. This sounds logical to me but is there something I'm missing? This workflow means I'd download the RAW files to the external hard drives and they will be automatically copied across if I've understood this correctly?
The potential downside as far as I can see is I'd be working on the files off a slow drive so is there a way I can automate the process to download the RAW images to the Mac HD and then automatically back them up to the external HDs?

I've looked at Time Machine but my concern is will it delete previously saved images from the external HDs once I delete them from the Mac HD to free up space once I've finished working on them or am I being unnecessarily concerned ?
 
Which Mac Mini do you have? I have a M1 which is fine for even video 4k editing, so don't think photos will be too much of a problem performance wise.
An M2 Mini with 24GB RAM. I'm pretty certain it will handle photo editing without any issues but I'm using the opportunity to sort out my backup workflow and file management
