Backing up Outlook .PST

Trying to sort out something at work.
We have an IMAP account, which doesn't have a great amount of storage, so every month of so I need to delete some old emails, with the storage we're allowed, I keep about 6 months of emails.
I've been asked to start backing up the .PST so that we keep all the old records I'm deleting, but the problem is that the software I've tried to do that, including a plugin for Outlook, always overwrites the old backup.
Can anyone recommend a program to backup the .PST but make a new backup everytime?
 
could you not transfer the created back up file to another location (eg external HDD or another folder every time a backup is created?
 
Thats what I do I just create a dated PST file and drag it into that. I also use a tool to remove all the attachments from the PST and store them separately. Saves a ton of space.
