Baked potato

I know this is hardly haute cuisine but sometimes you can't beat a baked potato. What toppings do you recommend which are healthy for some variety? I'm on a lot of tuna with cheddar at the moment. Protein overload.
 
Sadly what I like on my Potatoes is probably not that healthy :P Lots of butter with some cheese and beans :D Coleslaw sometimes
 
most obvious healthy options would be tuna mayo (low fat mayo if you like?), cottage cheese, chopped egg+mayo, beans, mackerel pate). As mentioned chilli works really well, I like a dollop of sour cream on too.

There's more options if you bake the potato, scoop it out, mix the potato with something else, then cook it some more. Mixing it with just a little cheese, some bacon pieces and a raw egg is very tasty.
 
If you are really health conscious then you should be aware that a baked potatoe itself it not that healthy per se, lots of starch. A healthier choice would be to get your carbs from additional vegetables, fruit and whole seeds. A sweet potato would also be a good choice.

Once cooked I like to open it up and stuff in a generaous helping of cheese then stick if back in the oven to melt. The melty cheese runoff goes nice and crispy on the backing tray, imo the best bit :)

If I'm feeling a little healthier, a big spoonful of low fat coleslaw, can't stand full fat creamy coleslaw!
 
butter, grated mature cheese, fresh ground black pepper, salad cream
EDIT: not low cal like the OP wanted but thats what i like :)
 
Par cook
Scoop out potato
Mix in finely chopped onion, bacon, cheese and a smidge of pepper
Put back into skins

Finish cooking.

Perfection.
