So we bought a couple of joints a few weeks ago whilst they were on offer, so we froze one of them. We got it out of the freezer yesterday to defrost and left it out. Now we've got it out of the plastic bag it was in we can see it's gone grey. I seem to be finding conflicting things online about whether this is to be expected..

It doesnt smell bad, in fact smells a bit like beef, lol :p

It's currently in the oven, maybe we will cook it a bit more than rare this time around! Thoughts?

It will be fine. Beef is a very 'safe' meat. Apparently you can eat it when it has gone green, though I have not or do not wish to try it myself. :D

You'll be fine, usually discolouration means something has been in contact somewhere along the way.

Usually happens with joints when they're large and the top touches it.

non frozen mince will do this as well, as said above, it naturally goes grey anyway, the only reason it stays red in supermarkets is that they pump nitrogen into the packets and remove the oxygen which prevents it oxidising and going a lovely shade of grey

It'll be fine. A clueless friend of mind bought a couple of rather expensive fillet steaks and left them in the fridge, she didn't get around to cooking them until their use by date, and upon seeing that they had gone a bit brown she threw them straight in the bin thinking the meat had gone off.

Us humans are very good at telling if meat is off. Give it a sniff and if it doesn't smell good you know its off.

Apart from gammon joints. They very often give off an odd odour when removing them from air tight packaging - so far in that supermarkets have begun to label them to suggest not to discard the meat so easily.

Beef's best left to stand for a while before cooking anyway.
Indeed. We had left it out (not in the fridge) for over 24hrs. I was a bit worried our kitchen was a bit too warm for it!

Anyway, I can report back that we are not dead. And the homemade gravy was probably the best I've ever made.
