Beefburger Recipe

I've got 800g of lean mince and some sesame seed buns.
I've never actually made home-made beefburgers before and there are quite a few different recipes on the net but does anyone have a really good method to share?

This one, but personally I skip the mustard and sub the cheddar for nice fresh mozarella, gorgeous!
