Hello there :)

Last time i was building my pc was 18 months ago and a lot has changed since then. Please can someone spec me for a £700 machine and one for a £1000

If that what spec u have in your sig, then tbh i would get a nice SSD, maybe another 5970 or upgrade to 7970 and some more ram?

Not sure what you need as your initial post is very vague. But that spec can start the proceedings lol
 
You already have a 2500K, so no point upgrading that. Perhaps upgrade the GPU to a 7970/680, and maybe an SSD?
