Before attempting overclocking...

I bought this system with the idea that I would be doing overclocking to get as much performance out of it as possible in games etc etc but at the moment I cant understand why when ive just ran Far Cry 2 (Yes it is a poor game) on max settings and my system just chewed through it without a single stutter.

Is there any program or game or something that will give my new beast enough work to break a sweat?

You're upset that your high-end system worked well? :D I'd give Far Cry 2 some time as well, it really grew on me on the 360 once I'd got used to it's style - despite the ton of stuff that is wrong with it.

GTA4 perhaps, it's meant to be tough on PCs?
 
Games these days are very GPU-limited; which means the graphics card is largely responsible for your frame rate and a faster CPU will make very little difference.

Overclocking improves general computing tasks rather than gaming.

Crysis is the only game that will really give your rig a challenge; try running it at 1920x1200 with all settings maxed and 8xAA :D
