Beginner First PC Advice (Config)

Hi everyone, first of all i want to state that I am a beginner with anything to do with PCs so I have little knowledge to none. I am a passionate gamer (10+ years console/laptop) and think it's time to upgrade to PC gaming.

My aim is game, stream, record and edit videos (maybe photoshop too) but also longevity of the PC. My budget is roughly £2000 (this can differ depending on value for money)

I also want to buy asus monitor 24inch 144hz.

Is this overkill? Or is this not enough? FYI i'm still deciding whether gtx 1080 or 1080ti will be worth it, same with 32gb or 16gb DDR4 3000hz.
