Beginner help with Itunes sync

My Mrs has an Ipad and I have a Iphone. Basically when I connect each item up to sync how do I stop it loading on all the stiff to my phone she has on her pad and vice versa?

Also the ipad has game center on it which I log onto for a few games I play on her pad. These games are available on the iphone and I can share the game on both as the data is server saved. I don't seem to have game center on my phone or find the app on itunes.

Any help?

I believe on iTunes if you click on the Device such as 'Jess's iPad' 3 box's will appear iPad, Version, Options.. in the Options tick Manually manage music and videos, I believe this will stop each device from automatically syncing. So obviously she should only sync with her files on her own iTunes. (manually by pressing the Sync icon in the bottom right) Hope this has helped I know its a pretty basic explanation.
