Best Card for 1080p?

Ive been following the RTX 3070 or RX6800 news and I was set on picking up one of them.

However I only have a 1080p monitor (AOC 24G2U) and Ive no plans to change it any time soon. Are these cards overkill for a 1080p setup? If so, what is a better choice?

Im currently building my first PC with this spec:

• AMD Ryzen 5000 (undecided which one right now)
• 32GB Ram
• B550M board
• WD 1Tb M.2
• HHD 10Tb

I use my PC for a mix of gaming and photo editing.

Cool.

I think the 6800 does make more sense. If it was a few months away maybe I'd get a 3070. Just not looking forward to the struggle of getting a 5000 and 6800.
