best / easiest way to access files securely over the internet ?

I have a server (currently running windows XP home edition, but will upgrade if neccessary) that has a lot of files on it that I want to be able to access over the internet, ideally if my pc could see it as a network drive but I am not sure this is possible.

These files need to be secure also, can this be done ?

You can do the following:

1) Set the server up to share certain drives / folders using permissions - you can then map them as network drives

2) Use something like FileZilla server to share files using SFTP

Is the server only on your network or can you also access externally? You might need to look into something like DynDNS (which would work fine with SFTP).

For example, using FileZilla on my homeserver I connect as follows from anywhere (a few things hidden for security reasons):

not sure if this is what you mean (sorry if its not!) but there are various types of software allowing you to access a pc from home or vise versa such as gotomypc, logmein and teamviewer I believe.
 
What router do you have? Some have VPN built into them, or I've upgraded the firmware on mine (a Netgear) to the DGTeam firmware which adds VPN support- there will likely be similar firmwares for other manufacturers too.

This would allow you to securely connect to your home network, as if you were there and do whatever you want.
