for me it has to be Red Alert 2, with "Hell March 2" being THE BEST game song ever. its such a good sound track that i bought the CD for it, and listen to hell march 2 everyday to get me psyched out, works wonders for the gym.

Tim & Geoff Follin are Gods! At a time when sound usage wasn't as important as graphics and gameplay, they really pushed the envelope.

But as this is the PC section, i'm guessing you mean PC only, so i'm going with Final Fantasy VII, it still gives me a weepy eye :(
 
FF VII was the first soundtrack I thought was amazing. Before it was a few other RPGs but I never really thought much of the soundtracks.

Mind you Streets of Rage II was an amazing soundtrack for its day.. but that isn't PC.
 
Most appropriate soundtracks - Incubation and UFO : Enemy Unknown. You wouldn't listen to them by themselves, but by god they dripped atmosphere.

Best - Fantasy General - for a pretty standard hex based wargame, this had an amazing choral score.

Homeworld - wow, just wow.

Edit - and going way, way back, Shadowfire for the C64
 
The first Halo game and Mafia are some of my favourite game soundtracks.

edit: Hitman: Blood Money too!

My top three:

1)Max Payne series...simply stunning musical works that really add to and heighten the emotional experience.
2)Unreal Tournament...I still leave the main menu running for a while when I fire this game up, just to hear the main title track.
3)Grand Theft Auto III...The radio stations in this game were sheer class in a glass.
 
I think FF7 is the only soundtrack i own so im going to say that, fantastic to listen too when you are in the right mood
 
Bioshock.. an utterly amazing soundtrack. Makes me tingle when I listen to it.

The HL2 soundtrack is pretty awesome too :)

IIRC, Ridge Racer 5 had some great trance ch00ns, but that was a console game..
