I'm currently setting up, at a leisurely pace, a web & mail setup with Debian testing/unstable. For several years I had been using Windows XP & Apache & PHP & MySQL & Mailenable & Miscellaneous apps for AV/Monitoring etc.
For over a year now I'd been meaning/wanting to migrate to Linux on it but never got around to it. Bare in mind I am still pretty new to it. Now I finally realised my mistake - I had been hoping to be able to get the whole migration done with minimal downtime. I had tried VMware server to get the hang of things, and considered first of all migrating the services from the Windows box to another and redirect traffic there, keep them running there, then setup Linux on the server, then point the traffic back at it. In short I had tried a lot of things but all were revolving around the idea of minimal work and minimal disturbance. I've finally found the way to go about it that works for me though; relax and care less. So I've had my e-mail redirected to G-Mail since my server last saw Windows. I settled on Debian as my distro of choice, and I'm just using SSH, no desktop environment (not necessary but also because I don't like Gnome or KDE - the same reason I've never really liked Linux as a desktop OS). I got Apache & PHP & MySQL setup pretty easily, as well as a few monitoring apps (phpsysinfo & munin) and apcupsd. I now know why people say apt is so cool

My question is this; what is the best setup for the following mail requirements:
IMAP collection.
Virtual users not necessary but it might be handy to have the ability to setup that in future.
Server side Spam processing that moves spam to an IMAP folder before collection (as opposed to just deleting it).
Web Mail access.
I am aware that there are many mail transfer agents and IMAP servers, and it is this that is causing me trouble; whereas the decision to use Apache as my http server was a no brainer, this is much more difficult, especially as I had previous experience with Apache but none with mail systems other than Mailenable.
I've looked around and these guides caught my eye but I'm finding it difficult to know what's best for my setup:
