(Heavily modded) Skyrim - Can be a brittle game when modded, but the experience of just being there is worth the annoyance.
Civ 5 - A surprise for me, but after the dreadful release, it's come on very nicely. Shame I don't play it as much as I should.
Mount and Blade: Warband - Looks pants, especially on the settings I've used, but plays wonderfully. Some epic moments have been had.
Dragon Age: Origins - Certainly not the best RPG ever, but it's the best of the last 5 years. I've still got a thing for Morrigan.
I know she's trouble, but... 
Honourable mentions go to Mass Effect 2, KSP and XCOM.
