I think the "essentials" are Dark Side of the Moon, Wish You Were Here and The Wall.
However, you may find others you like. I think "Animals" is one of their best works, along with "Meddle." There's also the live albums like Live at Pompeii and PULSE Live which are often good as they cover a fairly wide spectrum. (maybe even the Echoes album too - the best of)

However, I think a lot of the post-Waters material is massively underrated, especially A Momentary Lapse of Reason (1987) and The Division Bell (1994) - some of Gilmour's best guitar work and most emotive songwriting can be found on these two albums.
I was wondering when a Floyd thread was going to appear.
I first heard DSOTM around 3 weeks ago and since floyd have become easily one of my favourite bands.
Dark Side is their most accessable album and a good place to start, from there I would go with either Wish you were here or The Wall, the latter which is my least favourite of the three. I also bought animals today, which seems a lot more straight forward than their two previous albums.
A great band, enjoy! If you had to get one album, definately Dark Side of the Moon.
I first saw Floyd on their DSOTM tour in 74 (or lets say it was the album they concentrated on). It was also the first date I would have with my future wife. On that night they played all DSOTM and some tracks off their upcoming album which took about another year to release. They also played Echoes as an encore. A mate of mine who worked at Trentham Gardens was able to get a recorder into the gig and recorded the show. That recording became the biggest selling bootleg of all time and he got nothing for it.
