Best SIM for USA and Mexico holiday (data primarily)?

Hi all, figured this was the most appropriate sub forum for this question.

Going to be holidaying in the US and Mexico in a couple weeks, doing a fair bit of driving around and general sight seeing.

Mine or my partner's current phone contracts doesn't have any kind of out of EU data roaming allowance so I've been trying to find a good SIM for us to get so that we have some data whilst abroad to use Google Maps and do some research whilst we're out and about.

Does anyone have any recommendations for a SIM to last 3 weeks that has a decent amount of data that my partner and I can use? And will work in both the US and Mexico?

We will likely just get one SIM and I'll hotspot her unless the plan is relatively cheap.

Last time I was there (2019) I got a T-mobile prepaid sim with unlimited data for $50 for a month. I see you can add a mexico bolt-on for it for about $4, but it's not unlimited.
It worked really well for me - but when you use it to create a hotspot, your connected devices get very low throughput.

Do your phones support eSIM?
Yeh my partner's does, but mine doesn't. An esim solution would be perfect.

Also why is data so expensive over there. You can get like u limited here for 15-20 quid a month but over there it's double.

I've looked into Maya and Airalo (two esim providers I've used before) and they're both pretty expensive for USA if you're going to use a lot of data.

To be fair we won't need tons of data. It's more for just ordering Ubers/taxis, using maps and a little bit of web browsing.

Not cheap and data is limited, but very convenient.
Was looking into this myself, how quick is set up? Do you need to do a lot of fiddling in the settings?

Sorry for the (slight) thread resurrection, but I'm off to the US next week and have a brief question about these.

I don't want my home network (Vodafone) charging me for data roaming, but I do want to keep the SIM switched "on" so I can receive calls etc. Presumably, once I install an esim, I have the option to configure the two SIMs separately, so can switch data off on my Vodafone SIM, and on on my esim?

Yes, I do this all the time on my iPhone.
