Best way to build out new OSX instance?

My iMac had become very sluggish probably due to several versions of the OS being upgraded in place over the years so to speed things up I've got myself a new Thunderbolt SSD to build out a new OS instance.

The drive is all hooked up and I've installed a fresh copy of Yosemite onto it so I can dual boot now I need advice on what to do next, should I:-

A) I install and configure all my required apps manually (copying documents over from old drive where needed)
B) The migration assistance to copy both apps and data across (wondering if this will also copy across old bloat)
C) Some other approach

Any pointers/recommendations appreciated.

That's not the concern, as I say the system now has two drives and two O/S instances. I Just want to know if the migration assistant does a good job of moving apps, settings, and data over (leaving anything superfluous) or would I be better redoing everything from scratch and moving data manually?
